Oregon Business magazine has a well written article about food carts and the recession. Lucy Burningham covered the topic well, showcasing a few carts and some of the challenges and costs with opening a cart. She also researched the other side of the fence, discussing what restaurant owners think. With winter now officially here, there are fewer customers, so this article is poignant.
