What an ignorant comment. Po Town Vittles isn't claiming to be a proper British Chips wagon.

Anyone who's spent any time in the American South, and sometimes the Midwest for that matter knows that Catfish, not cod is the preferred fish for fried fish including the traditional accompaniment of french fries. In addition, I've encountered fried tilapia and "chips" in Louisiana on more than one occasion.

Plus, a fish very similar to Tilapia is made in a similar manner in Vietnam and Thailand. And it is delicious.

Finally, food cart food is meant to be cheap. Cod is an expensive fish. Catfish and Tilapia can be quite good. Who cares if they are "bottom feeders" So is lobster, crab and monkfish - are they cheap?

The lesson. There's more than one way to prepare fried fish
and chips.

Po Town Vittles - Talapia is a very cheap fish to buy. It is along the same quality of Cat Fish. They are scavengers.

In England - Fish and Chips - is Cod

Good quality fish makes a good fish and chips. I would never eat talapia or cat fish.
